  • 250 gram butter
  • ¾ cup sugar
  • 1 cup self raising flour
  • 1 cup plain flour
  • 1 tsp ginger powder


  • cup icing sugar
  • 80 gram butter
  • 4 tsp ginger powder
  • ¼ cup golden syrup


  • Preheat oven to 180° C
  • Grease and line a 20x30cm pan
  • Cream butter and sugar until light and fluffy
  • stir in flours and ginger. Press into pan
  • Prick with a fork
  • Bake for 20-25 minutes. Allow to cool
  • Heat syrup, butter, icing sugar and ginger in a saucepan for 3 minutes on low heat
  • Spread over cooled base
  • Allow to set and then slice
