Ingredients
  

Base
  • 250 gram butter
  • ¾ cup sugar
  • 1 cup self raising flour
  • 1 cup plain flour
  • 1 tsp ginger powder
Topping
  • cup icing sugar
  • 80 gram butter
  • 4 tsp ginger powder
  • ¼ cup golden syrup

Method
 

  1. Preheat oven to 180° C
  2. Grease and line a 20x30cm pan
  3. Cream butter and sugar until light and fluffy
  4. stir in flours and ginger. Press into pan
  5. Prick with a fork
  6. Bake for 20-25 minutes. Allow to cool
  7. Heat syrup, butter, icing sugar and ginger in a saucepan for 3 minutes on low heat
  8. Spread over cooled base
  9. Allow to set and then slice
