Mince Beef Stew (Foodi)

Equipment

  • Ninja Foodi or other pressure cooker

Ingredients
  

  • ½ cup water
  • 2 tbsp olive oil
  • 1 onion medium, diced
  • 2 carrots sliced
  • 1 stalk celery diced into small cubes
  • 500 gram beef mince
  • 500 gram white potatoes peeled and cut into cubes
  • 2 cloves garlic chopped
  • 1 tsp italian herbs or any other mixed herbs
  • 1 tsp beef stock powder can substitute with 1 tbsp vegemite
  • 1 tsp salt
  • ½ tsp pepper
  • 400 gram crushed tomatoes tin
  • 1 tbsp cornflour for thickening of stew
  • sour cream optional

Instructions
 

  • Prepare all of the ingredients before you start cooking as this dish comes together quickly
  • Set the Foodi to saute and allow to heat up
  • Add olive oil and onions and cook for around 2 minutes until onions are glassy
  • Add carrots and celery and cook for 2 more minutes to soften slightly
  • Add the mince, garlic, italian herbs, salt and pepper and stir through. Cook on saute until the beef has browned. Cancel the saute
  • Pour in the water and sitr through well scraping the bottom with the spatula
  • Add the potatoes and beef stock powder and stir through. Spread the crushed tomatoes on top without stirring through
  • Pressure cook on high for 5 minutes
  • Naturally release for 5 minutes and then quick release
  • While the stew is cooking, mix the cornflour with 3 tablespoons of water
  • Once the pressure is released, add the cornflour mixture and mix through the thicken the liquid

Notes

Serve as is or add a dollop of sour cream or some grated cheese
