Egg and Potato Salad

Ingredients
- 500 grams small new potatoes boiled and skinned
- 125 grams salami diced
- 2 sticks celery finely chopped
- 1 tbsp chives chopped
- 1 tbsp parsley chopped
- 6-8 tbsp mayonnaise
- 4 eggs hard boiled
- 6-8 lettuce leaves
- 1 tsp paprika

Instructions
- Thinly slice potatoes and combine with diced salami, celery, chives, parsley and mayonnaise
- Cut eggs in half and remove yolks. Chop the whites and add to the mixture along with half the sieved yolks
- Turn ingredients gently until mixed and serve on a base of lettuce leaves
- Garnish with remaining sieved egg yolk and paprika
